Broiled Pears with Maple Vanilla Walnuts & Cranberries
Makes 6 servings (1/2 pear each)

INGREDIENTS
3 pears, halved
3/4 cup walnuts, chopped
3 Tablespoons maple syrup
1/2 teaspoon vanilla extract
1/4 cup dried cranberries
Salt to taste

DIRECTIONS

  1. Pre-heat broiler.
  2. With melon baller scoop seeds from pear.
  3. Place pear halves flesh-side down on cookie sheet and broil for 12-15 minutes, until pears are tender.
  4. In skillet over medium heat toss walnuts and maple syrup for 3 minutes, until walnuts are toasted and syrup is reduced and sticking to walnuts.
  5. Add vanilla extract, cranberries, and salt to walnuts and sauté for 1 additional minute.
  6. Fill broiled pear halves with 2-3 Tablespoons of walnut mixture.
