Taquitos al Horno
Serves 12

INGREDIENTS
1 Tablespoon olive oil
2 cloves garlic, minced
1 red pepper, sliced thinly
1 green pepper, sliced thinly
1 yellow onion, sliced thinly
1/2 teaspoon cumin
1/2 teaspoon coriander
Pinch of salt
1 can spicy low-fat refried beans
1 can black beans, rinsed and drained
12 corn tortillas
Cooking spray

GAUCAMOLE
2 avocados, mashed
1 plum tomato, chopped
1 clove garlic, minced
1/2 yellow onion chopped
Juice of 1 lime
1/2 teaspoon salt

DIRECTIONS

  1. Pre-heat oven to 350 degrees F
  2. In a pan, sautee garlic, peppers, onion, cumin, coriander, and salt in oil
  3. In a bowl, mix together refried beans and black beans
  4. Fill each tortilla with beans and vegetables. Roll into cigar shape.
  5. In a baking dish sprayed with cooking spray, line up rolled taquitos
  6. Bake for 15-20 minutes until warm and slightly crunchy
  7. While they are baking, combining all guacamole ingredients
  8. Serve oven baked taquitos with guacamole
