Almond Date Truffles
Makes 16 truffles

INGREDIENTS
16 dried dates, pitted and chopped
¼ cup water
1 cup puffed brown rice
32 almonds, crushed

DIRECTIONS

  1. Puree dates and water in a food processor
  2. Stir date puree with puffed brown rice
  3. Roll mixture into 16 balls
  4. Coat each ball in crushed almonds

Serve and enjoy
