Cinnamon Sugar Crisps with Apples
Makes 12 servings

INGREDIENTS
3 apples, chopped (such as Braeburn, Rome, Granny Smith)
1 teaspoon cinnamon and 1 Tablespoon for sprinkling
3 Tablespoons sucanat and 3 Tablespoons for sprinkling
3 Tablespoons whole wheat flour
Juice of 1 lemon
9 white corn tortillas, each cut into 4 triangles
Cooking spray
(optional toppings: chopped walnuts and/or candied ginger pieces)

DIRECTIONS

  1. In pot over medium heat, cook apples with cinnamon, sucanat, flour, and lemon juice until thickened and tender (about 10 minutes)
  2. Place tortilla triangles on cookie sheet and spray each with cooking spray
  3. Sprinkle with cinnamon and sugar and broil until crispy (about 3-5 minutes)

Serve 3 triangles topped with warm apples and enjoy!
