Double Chocolate Pie with Raspberries
1 pie; 12 slices

INGREDIENTS
2 – 12 ounce packages of SILKEN light tofu (Mori-Nu™)
1 cup semi-sweet chocolate chips, split (no added milk fat; such as Enjoy Life™ brand)
1/3 cup granulated cane sugar + 2 Tablespoons of sugar for raspberries
1 pre-prepared whole wheat pie crust
2 cups raspberries (fresh or thawed frozen)

DIRECTIONS

  1. Pre-heat oven to 350 degrees
  2. Puree tofu until completely smooth
  3. Melt 3/4 cup chocolate chips. Add melted chocolate and sugar to tofu.
  4. Puree tofu, chocolate, and sugar together until thoroughly combined
  5. Fill pie crust with chocolate mixture
  6. Bake 45 minutes. Top baked pie with 1/4 cup reserved chocolate chips.
  7. Chill/set pie in fridge at least 2 hours
  8. Mash raspberries and 2 Tablespoons sugar with fork

Top each slice of pie with raspberry mixture and enjoy!
