Vanilla Almond Tea Cookies
Makes 3 dozen (36 cookies)

INGREDIENTS
3/4 cup whole wheat flour
1/2 cup white flour
1/4 cup flaxseeds, ground (also called “flax meal”)
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup almonds, chopped
1/2 cup silkentofu, mashed/pureed
1/3 cup light olive oil
1/2 cup brown sugar, packed
1/4 cup maple syrup
1 Tablespoon vanilla extract

DIRECTIONS

  1. Pre-heat oven to 350 degrees F
  2. In a bowl, mix together flours, flaxseeds, baking powder, salt, and almonds
  3. In another bowl, mix together tofu, olive oil, brown sugar, maple syrup, and vanilla
  4. Combine wet ingredients into the dry ingredients
  5. >Place batter by the teaspoon on an ungreased cookie sheet and bake for ~12 minutes
  6. Remove from oven when edges and bottom are slightly browned
  7. With the bottom of a drinking glass, press cookie flat
  8. Place cookies on rack and let cool

Serve with green or black tea – Enjoy!
