Barley with Dried Cranberries and Toasted Walnuts

INGREDIENTS
3.5 cups water
1 cup hulled barley
Lemon Flax Vinaigrette:
2 Tablespoons lemon juice (juice from 1 lemon)
2 Tablespoons flax oil
2 Tablespoons white wine vinegar
1 Tablespoon Dijon mustard
1 garlic clove, minced
Salt and Pepper to taste
1/4 cup dried cranberries
1/4 cup walnuts, toasted and chopped
4 green onions, chopped on bias/angle
