Dark Chocolate Mocha Mousse
Makes 9 servings (1/3 cup each)

INGREDIENTS
2 packages (12 ounces each) silken extra firm lite tofu
3/4 cup dark chocolate chips (no “milk fat” in ingredients)
2 teaspoons instant coffee crystals
1/4 cup agave nectar
1 teaspoon vanilla extract

DIRECTIONS

  1. Puree tofu until smooth.
  2. Melt chocolate chips in double boiler and stir in coffee crystals.
  3. Mix together tofu, melted chocolate mixture, agave nectar and vanilla.
  4. Chill about 1 hour, until set.
