Watercress & Roasted Garlic Crostini
Serves 8

INGREDIENTS
1 whole wheat baguette, cut on bias into 16 slices
2 Tablespoons olive oil, split
2 bulbs garlic
1 can (16 ounce) cannellini beans, rinsed and drained
Salt & Pepper, to taste
1 bunch watercress, cleaned and bottom stems removed
1/4 cup minced red onion or radishes
2 Tablespoons balsamic vinegar

DIRECTIONS
  1. Pre-heat oven to 425 degrees F.
  2. Place baguette slices on cookie sheet and brush with 1 Tablespoon olive oil.
  3. Cut 1/4 inch off top of garlic bulbs, drizzle with 1 Tablespoon olive oil and wrap in foil.
  4. Put bread and garlic in oven until bread is toasted (6-8 mins) and garlic is soft (25-30 mins).
  5. Mash beans with roasted garlic, salt and pepper.
  6. Spread bean mixture on toasted bread slices.
  7. Top with watercress, red onion and balsamic vinegar.
