Orange, Maple & Walnut Cottage Bake with Blackberry Coulis
Serves 6

INGREDIENTS
2 cups low-fat cottage cheese
1/2 cup 100% orange juice
1/4 cup maple syrup
1 teaspoon vanilla extract
Few dash of cinnamon
1/2 cup chopped walnuts
8 slices of 100% whole grain bread, cut into 1” cubes
Cooking spray

Coulis
1 cup blackberries
4 Tablespoons maple syrup
2 Tablespoons lemon juice

DIRECTIONS
  1. Pre-heat oven to 350 degrees F.
  2. Puree cottage cheese, orange juice, maple syrup, vanilla and cinnamon until smooth.
  3. Stir in walnuts and bread.
  4. Spray baking dish with cooking spray and spoon in bread mixture.
  5. Cover and bake 20 minutes. Remove cover and bake an additional 20 minutes, until golden.
    Note: If you prefer more crunchy/golden top, broil for an additional 3 to 5 minutes.
  6. In pot over medium heat, cook blackberries, maple syrup and lemon juice for 5-10 minutes (mashing with spatula) until syrupy.
