Soft Tacos with Creamy Guacamole Dressing
Makes 8 tacos

INGREDIENTS
1 Tablespoon olive oil
2 cloves garlic, minced
2 cups textured vegetable protein (TVP); such as Bob’s Red Mill or in bulk section
2 cups water
1 packet (1.25 ounce) taco seasoning (MSG-free such as Hains)

8 (6") white corn or whole wheat tortillas
2 cups shredded romaine
3 green onions, chopped
4 plum tomatoes, chopped
1 can (3 ounces) sliced black olives

Creamy Guacamole Dressing:
2 avocados
1/4 cup low-fat plain yogurt
1/4 cup spicy salsa

DIRECTIONS

  1. Sauté garlic in oil for 1 minute.
  2. Add TVP, water and taco seasoning for 7 minutes, until consistency of taco “meat”.
  3. Warm tortillas and fill with taco “meat”, romaine, green onions, tomatoes, and olives.
  4. Mash avocados until smooth. Stir in yogurt and salsa. Dollop on tacos.
  5. Optional toppings: cilantro & shredded cheddar cheese.
