Fried White Beans & Garlic Greens Baguette
Makes 6 servings

INGREDIENTS
2 Tablespoons olive oil – split
1 can of white cannelloni beans, rinsed and drained
3 cloves garlic, minced
1 teaspoon of crushed red pepper flakes
6 cups rainbow chard, sliced into small, bite sized ribbons
Salt and Pepper to taste
Whole grain baguette, halved, cut into 3” long pieces, and toasted

DIRECTIONS

  1. Heat 1 T oil in skillet and pan fry white beans until crispy on edges (gently toss)
  2. Set fried beans aside
  3. In same skillet, add 1 T oil, garlic and red pepper flakes. Sauté 1-3 minutes.
  4. Add greens to skillet. Sauté about 8 minutes until wilted & tender.
  5. Top toasted baguette with greens and beans
