Lemon Flax Vinaigrette on Spring Greens

INGREDIENTS
Salad:
1 bag mixed spring greens
1/4 cup pistachios
1/4 cup dried cherries
1/2 jicama, thinly sliced
Dressing:
1/4 cup lemon juice (~ juice from 2 lemons)
1/4 cup flax oil
1/4 cup white wine vinegar
1 Tablespoon Dijon mustard
1 garlic clove, minced
Salt and Pepper to taste
