Curried Quinoa Salad
Serves 4

INGREDIENTS
1 cup quinoa
1 3/4 cups water
1 tsp curry powder
4 green onions, diced
1/4 cup dried cranberries
1/4 cup walnuts, chopped
Dash of salt and pepper

DIRECTIONS
  1. Bring water and quinoa to boil.
  2. Cover and simmer for 15 minutes (all of the water will be absorbed).
  3. Stir in remaining ingredients
