Sunflower & Chocolate Chip Cookies
Makes 30 cookies

INGREDIENTS
1 Tablespoon ground flax (also called flax meal)
3 Tablespoons almost-boiling water
2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon salt
3 Tablespoons virgin coconut oil (not refined)
1/3 cup agave nectar
1/4 cup carrot puree (carrot baby food)
1/2 cup sunflower seed butter (chunky)
1 lemon, juiced
1 teaspoon vanilla extract
1/4 cup mini-chocolate chips (such as Enjoy Life brand)
Cooking spray
Vanilla ice cream (such as So Delicious brand)

DIRECTIONS

  1. Pre-heat oven to 375 degrees F.
  2. Whisk together flax & water. Let sit for 3 minutes until thick.
  3. Grind oats, baking soda and salt until course flour consistency.
  4. Mix thickened flax, oil, agave, carrot puree, sunflower seed butter, lemon juice, and vanilla.
  5. Stir in dry oat mixture. Add in chocolate chips.
  6. Mist cookie sheet with cooking spray.
  7. Drop cookie batter by the Tablespoon onto cookie sheet.
  8. Bake for 10-12 minutes, until golden.
  9. Flatten baked cookie with bottom of drinking glass. Let cool.

* Optional Mini Open-Faced Ice Cream Sandwich: Serve cookie in small bowl with 2 T ice cream.
