Curried Chickpea & Basmati Salad

INGREDIENTS
1.5 cups brown basmati rice
3.5 cups water
1 Tablespoon olive oil
1 onion, diced
2 teaspoons yellow curry paste
2 cloves garlic, minced
1/4 cup 100% pineapple juice
2 cans (16 ounces each) chickpeas/garbanzo beans, rinsed and drained
12 cups baby spinach
3 cups red seedless grapes, halved
6 green onions, chopped
1/2 cup cashews, chopped
