Serves 4 (1/2 cup of berries & 1/4 cup of ricotta)

1/2 cup fresh mint leaves
1 cup part-skim ricotta cheese
2 cups strawberries, sliced (you can use any berries)
2 Tablespoons pistachios, chopped
