Honey Mint Ricotta & Fresh Berries
Serves 4 (1/2 cup of berries & 1/4 cup of ricotta)

INGREDIENTS
2 Tablespoons honey
1/2 cup fresh mint leaves
1 cup part-skim ricotta cheese
2 cups strawberries, sliced (you can use any berries)
2 Tablespoons pistachios, chopped

DIRECTIONS

  1. In a food processor, blend honey, ricotta and mint.
  2. Serve with sliced berries & top with pistachios.
