BBQ Satay & Greens with Brown Rice
Serves 4

INGREDIENTS

1 package (8 ounce) tempeh (Lightlife™)
1/2 cup barbeque sauce, split
4 teaspoons olive oil, split
1 small onion, sliced
1 bag (16 ounce) pre-chopped Collard greens (Dole™ or Glory Foods™)
1 clove garlic, minced
1 pack (2 cups) microwavable/precooked brown rice (Frozen: Birds Eye™ or Whole Foods™, Pouches: Uncle Ben’s™ or Trader Joe’s™)

DIRECTIONS
  1. Cut tempeh in half widthwise. Cut each half into 4 strips lengthwise. Skewer tempeh and brush with 1/4 cup barbeque sauce. Grill for 3 minutes on each side. Brush with an additional 2 Tablespoons of barbeque sauce before serving

  2. Sauté onion in 2 teaspoons olive oil for 4 minutes. Add 2 Tablespoons barbeque sauce and greens and sauté for 10 minutes, until tender

  3. Sauté 2 teaspoons olive oil and garlic for 3 minutes

  4. Toss rice in oil for 3-4 minutes until heated.
