Cinnamon & Sugar Apple Ring Fritters
serves 6

INGREDIENTS
2 apples, cored and sliced into thin rings (about 9 rings per apple)
1.5 cups prepared whole grain pancake mix
1 Tablespoon oil
2 Tablespoons cinnamon
2 Tablespoons sugar

DIRECTIONS
  1. Dip apple rings into pancake batter
  2. In a skillet with oil, cook (low-med heat) dipped ring - about 2 mins on each side/until browned
  3. Sprinkle with cinnamon and sugar (optional: top with chopped walnuts)

Serve and enjoy!
