Indian Spinach Pita
Makes 4 pita halves

INGREDIENTS
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 teaspoon garam masala
1 Tablespoon olive oil
1 large tomato, diced
1/4 red onion, finely chopped
4 ounces baked tofu (Soy Deli™ brand/savory flavor), chopped
6 ounce bag baby spinach
2 whole wheat pitas, halved and toasted

DIRECTIONS
  1. Sauté ginger, garlic, and garam masala in olive oil for 2 minutes.
  2. Add tomatoes and onions and sauté for another 3 minutes.
  3. Add tofu and spinach and cook covered for 10 minutes.
  4. Stuff hot or room temperature mixture into pita when ready to eat.
