Polenta Pizza Bake
4 servings
INGREDIENTS
3 cups water
1 cup corn meal (medium grind)
1 Tablespoon dried oregano
2 cloves garlic, minced
Dash of salt
*Super Sauce:
8 roma tomatoes, halved
1 cup broccoli, cut
1 zucchini, quartered
2 carrots, halved
1 red bell pepper, seeded and cut in half
1 green bell pepper, seeded and cut in half
1 small onion, quartered
4 cloves garlic
1 cup fresh basil
4 ounces fresh mozzarella
*Time saver: Use your favorite jarred spaghetti sauce (aim for 60-80 calories per 1/2 cup serving)
