Chocolate Chip Pumpkin Spice Bars
Makes 12 serving

INGREDIENTS
Crust
1/4 cup olive oil
1/4 cup honey
1/4 cup unsweetened vanilla almond milk
1/2 cup rolled oats
1/4 cup ground flaxseeds
1 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon pumpkin pie spice

Filling
1.5 cups canned pumpkin
1/4 cup honey
1 teaspoon pumpkin pie spice

1/4 cup chocolate chips

DIRECTIONS

  1. Pre-heat oven to 350 degrees F.
  2. Mix together oil, honey, and almond milk.
  3. In another bowl mix together oats, flaxseeds, flour, baking soda, salt, and pumpkin pie spice.
  4. Thoroughly combine wet ingredients into the dry ones.
  5. Coat an 8X8 baking dish with cooking spray.
  6. Press 2/3 of the oatmeal crust mixture into bottom of dish.
  7. Mix together pumpkin, honey, and spice and spread mixture evenly on top.
  8. Sprinkle on the remaining oatmeal crust mixture and chocolate chips.
  9. Bake for 25-30 minutes, until golden.
  10. Let set for 10 minutes and serve warm or room temperature.
