Apples and Fennel w/ Warm Maple Vinaigrette
Serves 10

INGREDIENTS
2 red apples, cubed (such as Honey Crisp)
2 fennel bulbs, sliced thinly (4 T of fennel fronds finely chopped)
4 T maple syrup
4 T white balsamic vinegar
½ cup toasted walnuts, finely chopped

DIRECTIONS

  1. In skillet, cook apples & fennel until slightly tender (about 4 minutes)
  2. Add maple syrup & vinegar mixture until warm (another 2-3 minutes)
  3. Sprinkle walnuts and fennel fronds on top

Serve Warm & Enjoy!
