Butternut Squash and Barley Pilaf
Serves 10
INGREDIENTS
3 cups water
1 cup hulled barley
2 T olive oil (split)
1 clove garlic, minced
2 T fresh thyme
2 cups butternut squash, cubed
2 green onions, chopped
¼ cup dried cranberries
½ tsp salt
½ tsp pepper
DIRECTIONS
