Zucchini Fritters
Serves 8

INGREDIENTS
1 can white beans, rinsed and drained
2 zucchini, grated
4 green onions, chopped (split)
1/2 cup whole wheat flour
1 teaspoon dried oregano
Dash of salt and pepper
1 container (6 oz) plain yogurt
Cooking spray

DIRECTIONS

  1. Puree beans
  2. Mix beans with zucchini, most of the onions, flour, oregano, salt/pepper
  3. Form mixture into 8 patties
  4. In skillet sprayed with oil, cook each side of fritter until brown (about 3 minutes on each side)
  5. Top with plain yogurt and sprinkle rest of the chopped green onions
