
Cinnamon Sugar Crisps with Apples
Makes 12 servings
INGREDIENTS
3 apples, chopped (such as Braeburn, Rome, Granny Smith)
1 teaspoon cinnamon and 1 Tablespoon for sprinkling
3 Tablespoons sucanat and 3 Tablespoons for sprinkling
3 Tablespoons whole wheat flour
Juice of 1 lemon
9 white corn tortillas, each cut into 4 triangles
Cooking spray
(optional toppings: chopped walnuts and/or candied ginger pieces)
DIRECTIONS
- In pot over medium heat, cook apples with cinnamon, sucanat, flour, and lemon juice until thickened and tender (about 10 minutes)
- Place tortilla triangles on cookie sheet and spray each with cooking spray
- Sprinkle with cinnamon and sugar and broil until crispy (about 3-5 minutes)
Serve 3 triangles topped with warm apples and enjoy!
