Figgie Pear Sauce w/Gingersnap Crumble
Serves 8

INGREDIENTS
2 large pears, diced
1/2 cup dried figs, diced
2 Tablespoons maple syrup
1 teaspoon vanilla extract
16 gingersnap cookies, crushed (whole grain: Sha Sha Bread Company™ @ Whole Foods)
2 cups French vanilla SoyDream™ ice cream

DIRECTIONS

  1. Put pears, figs, maple syrup, and vanilla in pot. Cover and cook.
  2. Stir occasionally and mash until tender and partially smooth.

Serve over ice cream and top with gingersnap crumbs.
