
Figgie Pear Sauce w/Gingersnap Crumble
Serves 8
INGREDIENTS
2 large pears, diced
1/2 cup dried figs, diced
2 Tablespoons maple syrup
1 teaspoon vanilla extract
16 gingersnap cookies, crushed (whole grain: Sha Sha Bread Company™ @ Whole Foods)
2 cups French vanilla SoyDream™ ice cream
DIRECTIONS
- Put pears, figs, maple syrup, and vanilla in pot. Cover and cook.
- Stir occasionally and mash until tender and partially smooth.
Serve over ice cream and top with gingersnap crumbs.
