Spinach Salad with Pumpkin Seeds and Avocado

INGREDIENTS
Lemon Flax Vinaigrette:
1/4 cup lemon juice (juice from 2 lemons)
1/4 cup flaxseed oil
1/4 cup white wine vinegar
1 Tablespoon Dijon mustard
1 garlic clove, minced
Salt and Pepper to taste
Salad:
1 bag (10 oz) baby spinach
1 bag (10 oz) chopped Romaine lettuce
1/4 cup hulled pumpkin seeds (aka “pepitas”)
1 avocado, diced
1 green apple, diced
