
Vanilla Almond Tea Cookies
Makes 3 dozen (36 cookies)
INGREDIENTS
3/4 cup whole wheat flour
1/2 cup white flour
1/4 cup flaxseeds, ground (also called “flax meal”)
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup almonds, chopped
1/2 cup silkentofu, mashed/pureed
1/3 cup light olive oil
1/2 cup brown sugar, packed
1/4 cup maple syrup
1 Tablespoon vanilla extract
DIRECTIONS
- Pre-heat oven to 350 degrees F
- In a bowl, mix together flours, flaxseeds, baking powder, salt, and almonds
- In another bowl, mix together tofu, olive oil, brown sugar, maple syrup, and vanilla
- Combine wet ingredients into the dry ingredients
- >Place batter by the teaspoon on an ungreased cookie sheet and bake for ~12 minutes
- Remove from oven when edges and bottom are slightly browned
- With the bottom of a drinking glass, press cookie flat
- Place cookies on rack and let cool
Serve with green or black tea – Enjoy!
