
Garlic Swiss Chard Linguini with Fried Eggs
Makes 6 servings (1.5 cups each)
INGREDIENTS
12 ounces dry whole grain linguini
2 Tablespoons olive oil
4 cloves garlic, minced
2 bunches swiss chard (about 8 cups), chopped into bite-size pieces
Salt & pepper, to taste
6 eggs
4 Tablespoons fresh basil, dill or chives, chopped
DIRECTIONS
- Prepare pasta according to directions. Drain reserving about 1/4 cup pasta liquid.
- In skillet sauté olive oil and garlic for 1 minute.
- Add chard, salt, pepper and sauté for an additional 7 minutes.
- Toss cooked chard with pasta & reserved water.
- Fry eggs in skillet or pancake griddle brushed with olive oil until over-medium.
- Top serving of pasta mixture with 1 fried egg.
- Sprinkle with herbs, salt, pepper and drizzle of olive oil (optional).
