Lavender Lemon Mousse with Fresh Berries
Serves 6

INGREDIENTS
1/2 cup agave nectar
2 Tablespoons fresh lavender leaves, chopped
1 package silken tofu
2 Tablespoons fresh lemon juice
1 Tablespoon lemon zest
1/2 teaspoon vanilla extract

3 cups fresh berries (blueberries, raspberries, blackberries, or strawberries)
6 Tablespoons sliced almonds, toasted

DIRECTIONS
  1. Bring agave to boil, add lavender, simmer covered for 8 minutes. Strain out lavender leaves.
  2. In food processor, puree lavender agave nectar, tofu, lemon juice, zest and vanilla until smooth.
  3. Refrigerate mousse until firm. Top mousse with berries & toasted almonds.
