
Orange, Maple & Walnut Cottage Bake with Blackberry Coulis
Serves 6
INGREDIENTS
2 cups low-fat cottage cheese
1/2 cup 100% orange juice
1/4 cup maple syrup
1 teaspoon vanilla extract
Few dash of cinnamon
1/2 cup chopped walnuts
8 slices of 100% whole grain bread, cut into 1” cubes
Cooking spray
Coulis
1 cup blackberries
4 Tablespoons maple syrup
2 Tablespoons lemon juice
DIRECTIONS
- Pre-heat oven to 350 degrees F.
- Puree cottage cheese, orange juice, maple syrup, vanilla and cinnamon until smooth.
- Stir in walnuts and bread.
- Spray baking dish with cooking spray and spoon in bread mixture.
- Cover and bake 20 minutes. Remove cover and bake an additional 20 minutes, until golden.
Note: If you prefer more crunchy/golden top, broil for an additional 3 to 5 minutes.
- In pot over medium heat, cook blackberries, maple syrup and lemon juice for 5-10 minutes (mashing with spatula) until syrupy.
