Cucumber, Radish & Mango Salad with Agave Lime Vinaigrette
Serves 6

INGREDIENTS
Dressing:
2 Tablespoons agave nectar
3 Tablespoons lime juice
3 Tablespoons olive oil
2 Tablespoons white balsamic vinegar
Salt and Pepper to taste

Salad:
8 cups spring green salad mix
2 cups cucumber, sliced/quartered
1 cup chopped radishes
1 mango, diced

DIRECTIONS
  1. Wisk dressing ingredients.
  2. Toss dressing with salad ingredients.
