BBQ Greens w/Tofu Skewers & Sweet Potato Fries
Serves 6

INGREDIENTS
2 Tablespoons olive oil
1 package extra firm tofu (NOT silken) – cut into 12 squares
1/2 cup BBQ Sauce
1 sweet onion, thinly sliced
3 cups each of Collard Greens & Kale, sliced into ribbons
3 sweet potatoes
Salt to taste

Skewers
Cooking Spray

DIRECTIONS

  1. Pre-heat oven to 400 degrees F
  2. Slice sweet potatoes up into wedges, sprinkle with salt and spray with cooking spray
  3. Bake for 30 minutes (turning occasionally) until potatoes are cooked and edges are crunchy
  4. In a skillet lightly coated with olive oil, pan fry tofu (about 4 minutes on each side-until crispy)
  5. Place tofu on skewers and brush with 1/4 cup BBQ sauce
  6. In same skillet, put remaining BBQ sauce and onions. Cook 3-5 minutes.
  7. Add greens and cook 7 minutes - until tender.

Serve tofu skewers on greens with a side of fries.
