
Curried Quinoa Salad
Serves 4
INGREDIENTS
1 cup quinoa
1 3/4 cups water
1 tsp curry powder
4 green onions, diced
1/4 cup dried cranberries
1/4 cup walnuts, chopped
Dash of salt and pepper
DIRECTIONS
- Bring water and quinoa to boil.
- Cover and simmer for 15 minutes (all of the water will be absorbed).
- Stir in remaining ingredients
