
Sunflower & Chocolate Chip Cookies
Makes 30 cookies
INGREDIENTS
1 Tablespoon ground flax (also called flax meal)
3 Tablespoons almost-boiling water
2 cups rolled oats
1/2 teaspoon baking soda
1/2 teaspoon salt
3 Tablespoons virgin coconut oil (not refined)
1/3 cup agave nectar
1/4 cup carrot puree (carrot baby food)
1/2 cup sunflower seed butter (chunky)
1 lemon, juiced
1 teaspoon vanilla extract
1/4 cup mini-chocolate chips (such as Enjoy Life brand)
Cooking spray
Vanilla ice cream (such as So Delicious brand)
DIRECTIONS
- Pre-heat oven to 375 degrees F.
- Whisk together flax & water. Let sit for 3 minutes until thick.
- Grind oats, baking soda and salt until course flour consistency.
- Mix thickened flax, oil, agave, carrot puree, sunflower seed butter, lemon juice, and vanilla.
- Stir in dry oat mixture. Add in chocolate chips.
- Mist cookie sheet with cooking spray.
- Drop cookie batter by the Tablespoon onto cookie sheet.
- Bake for 10-12 minutes, until golden.
- Flatten baked cookie with bottom of drinking glass. Let cool.
* Optional Mini Open-Faced Ice Cream Sandwich: Serve cookie in small bowl with 2 T ice cream.
