Orzo Salad with Cilantro Lime Pesto
Makes 6 servings (about 1.5 cups each)
INGREDIENTS
2 cups (uncooked) whole wheat orzo
Cilantro Lime Pesto:
1 bunch of cilantro
4 Tablespoons lime juice
2 Tablespoons olive oil
4 Tablespoons pine nuts
2 cloves garlic, minced
1 (15oz) can black beans, rinsed & drained
1 (8oz) can corn, rinsed & drained (or 2 ears of grilled corn/removed from ear)
10 baby/mini bell peppers, grilled & chopped
Salt and pepper to taste
DIRECTIONS
Serve room temperature and enjoy!
