Asian Napa Salad
Serves 6

INGREDIENTS
Tofu:
8 ounces extra firm tofu (not silken), pressed well to remove water
Low-sodium soy sauce, for brushing

Dressing:
6 Tablespoons seasoned brown rice vinegar (such as Spectrum™)
2 Tablespoons sesame oil
Salad:
1 head napa cabbage, shredded (about 8 cups)
1 red bell pepper, thinly sliced
1/2 English cucumber, halved and sliced
6 green onions, chopped
2 Tablespoons Seaweed Gomasio (such as Eden Organic™ found in Asian section)

DIRECTIONS
  1. Cut tofu into 12 triangles. Brush with soy sauce and grill.
  2. Wisk together dressing and toss with salad ingredients.
  3. Top tossed salad with grilled tofu.
