Coconut-Date Candy
Makes 8 candies

INGREDIENTS
1 cup medjool dates (about 10), pitted
4 teaspoons unsweetened dried coconut

DIRECTIONS
  1. Chop dates and knead until smooth. Shape into a ball.
  2. Cut into 8 equal pieces, mold each into small ball, and roll in coconut
  3. Refrigerate to set about 15 minutes. Serve cold or room temperature.
