Avocado & Black Bean Rice Bowl
Serves 2

INGREDIENTS
1 cup cooked brown rice (pre-cooked/microwavable such as Birds Eye™ or Uncle Bens™)
1 cup canned black beans (rinsed and drained)
1/2 zucchini, chopped
1/2 cup salsa
8 cups shredded romaine lettuce
1/2 avocado, diced
1 lime, juiced

DIRECTIONS
  1. Heat rice, beans, zucchini, and salsa in microwave for 3-4 mins (or in skillet for 6 mins)
  2. Top greens with rice mixture, diced avocado, and lime juice
  3. Serve warm or room temperature
