Cashew Cookies
Makes 3 dozen cookies

INGREDIENTS
1 package (12 ounces) silken tofu
2 cups cashews
1 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
Cooking spray

DIRECTIONS

  1. Preheat oven to 325 degrees F.
  2. In food processor or with hand blender, puree tofu until smooth. Set aside.
  3. In food processor, pulse cashews, sugar, and salt until finely ground.
  4. Stir 1 cup of pureed tofu, vanilla extract, and cashew mixture until thoroughly combined.
  5. Spray cookie sheets with cooking spray.
  6. Drop batter by the Tablespoon about 2 inches apart on cookie sheets.
  7. Use a glass to gently flatten cookies.
  8. Bake for 30 minutes, until golden. Let cool and serve.
