It’s officially the season where you have to put PUMPKIN SPICE in all. the. things. So I whipped up a batch of…Pumpkin Spice Nice Cream. It’s made with just 3-ingredients, has no-sugar-added, and leaves you feeling all fall like and festive. 🍂
Here’s how to make
Pumpkin Spice Nice Cream
In a blender or food processor, purée 2 peeled, chopped, frozen bananas + 1/4 cup unsweetened canned pumpkin puree + heaping 1/4 teaspoon pumpkin pie spice until creamy.
Dig in, it’s ready to eat right away. Or freeze & let thaw for 5-7 minutes before eating.
It’s delish as is or you can top w/ crushed nuts or cocoa nibs.
Makes 2 servings.

Hi Dawn, I was enamored with this idea because I love pumpkin spice everything!!… but couldn’t make the frozen bananas and pumpkin blend without adding quite of bit of coconut milk… maybe because I was trying to make this using a magic bullet? First I tried adding more pumpkin, and that didn’t work at all. After a lot of coconut milk, plus stirring/shuffling and trying to get the bananas to blend with the pumpkin the end results was pretty good… just wondering if the added liquid is needed or if I used the wrong equipment.

Hey there! Glad you tried the nice cream! I love making nice cream in a food processor over any type of blender (since it has a shallow bowl instead of tall blender cup). However the recipe can definitely work in a blender. PRO-TIP for next time: Sounds like the bananas could be the problem. Cut them into smaller pieces & let them thaw about 7 minutes before putting them in your blender. Then they will be easier to blend/more creamy & less hard & icey. And you may have to still scrape 2 or 3 times between blending but with the right size & temp of the bananas it will be easier! xx
