My hubs & I LOVE pizza. To make it super summery, we put the crust on the grill & then bring it in for FRESH SALAD toppings.
This super summery SALAD PIZZA is thin raw zucchini, arugula, tomato, fresh basil, and ricotta cheese. Topped with lemon-flax dressing for a dose of healthy vegetarian omega-3 fats. Whatever salad doesn’t fit ON the pizza, we eat on-the-side.
No red sauce on this one, but that would also be delish. This is a great meal sitting out on the patio w/ a sparkling water or wine.
Ingredients
CRUST:
sprouted whole grain crust, grilled or baked
SALAD:
raw zucchini, thinly sliced
arugula
tomato
basil
ricotta cheese
DRESSING:
"lemon-flax vinaigrette"
4 tablespoons NOW organic flaxseed oil
4 tablespoons fresh lemon juice (1-2 lemons)
1 teaspoon minced garlic
1 teaspoon dijon mustard
sea salt & black pepper, to taste
Directions
- Top the grilled/baked crust with all the salad ingredients.
- Mix together the vinaigrette ingredients and drizzle all over the salad pizza. ENJOY!
