These incredibly easy SWEET POTATO WAFFLES (swaffles!) are your vehicle for ALL. THE. THINGS. Make them for breakfast, lunch, or dinner and top them with whatever you’re feeling that day!

• 4 cups coarsely grated sweet potato (about 2 medium potatoes)
• 2 eggs
• 1 tsp salt
Mix together 4 cups of coarsely grated sweet potato (about 2 medium potatoes) + 2 eggs + a dash of salt and you've got your "batter." Add 1/2 cup of batter to your waffle iron, spread it out evenly, and cook to your desired crispness.
Now comes the fun part! Top your SWAFFLES with fruit, veggies, beans ... the possibilities are endless. Last night Chris and I topped them with loads of garlicky sauteed kale and a fried egg.
