These incredibly easy 2-ingredient SWEET POTATO WAFFLES (swaffles!) are your vehicle for ALL. THE. THINGS. Make them for breakfast, lunch, or dinner and top them with whatever you’re feeling that day!

Ingredients
• 4 cups coarsely grated sweet potato (about 2 medium potatoes)
• 2 eggs
• 1 tsp salt
Directions
Mix together 4 cups of coarsely grated sweet potato (about 2 medium potatoes) + 2 eggs + a dash of salt and you've got your "batter." Add 1/2 cup of batter to your waffle iron, spread it out evenly, and cook to your desired crispness.
Now comes the fun part! Top your SWAFFLES with fruit, veggies, beans ... the possibilities are endless. Last night Chris and I topped them with loads of garlicky sauteed kale and a fried egg.

Oh, I love these SWAFFLES! They are great with sweet or savory toppings. I have never tried them as PANCAKES, but I love the idea. Let me know if you try it! I actually bought an inexpensive waffle maker just to make these, I like that it cooks both sides at the same time so they are done quickly! I have purchased fresh or frozen sweet potato “noodles” & just chopped them up instead of grating the potatoes. I’ve also seen frozen sweet potato & cauliflower “rice” that would also be something fun to try! xx

Oooh! I love SWAFFLES! They keep in fridge for up to 5 days, and freezer up to 3 months. They are great reheated in a air-fryer! Hope you try them! They are so fun, nourishing & delish! xx
