I love these 3-ingredient cookies made w/ ripe bananas, walnuts, and whole grain oats. The bananas add sweetness so you don’t have to use sugar, the walnuts provide healthy fats, and the oats contain a special type of fiber called beta-glucan which may help lower cholesterol.

Ingredients
- 2 bananas
- 1 cup rolled oats
- 1/4 cup chopped walnuts
- cooking spray
Directions
- Pre-heat oven to 375 degrees F.
- Mash bananas thoroughly. Mix in oats & walnuts.
- Mist baking sheet with cooking spray. Using a scoop, form 16 cookies on sheet.
- Bake for 18-20 minutes.
- Immediately after removing cookies from over, press them flat with the bottom of a small drinking glass. Allow to cool.
- Freeze or store cookies in an airtight container for up to 5 days.

I have a big sweet tooth and am always looking for some type of “desert” for after dinner. I didn’t have high hopes for these cookies as i didn’t think that the 3 ingredients would cook up well, but let me tell you… these were just what I needed for a sweet treat. I just made these for second time and added 1 Tbsp of peanut butter and a small amount of mini chocolate chips. They are awesome! I purchased the quick start, but I can’t wait for your book to come out in December.

Try cocoa nibs instead of chocolate chips & see what you think. Cocoa nibs are “nature’s chocolate chip” & have no sugar! xx

This is so easy to make I don’t even know why I waste my money on breakfast bars or snack bars from the grocery store. I added some chocolate to mine too 🙂

Yummy !!!! We tried them for dessert tonight and added cinnamon on the top after cooking with just a little maple syrup too. Now we need to try to avoid eating them all tonight 🙂

I love this simple and easy recipe. I add in 1/4 cup of raisians, and bake them on parchment paper to avoid the oil. They are great for breakfast on the go as well:)

I cannot eat nuts. Would these be ok without nuts?

Yes! It’s great w/ dark chocolate chips in place of the nuts!! Can also add things like raisins or sunflower seeds. xx
