The best cookies ever! Just 3 simple ingredients: almond flour, coconut sugar, baking powder!
They are crisp on the outside, and chewy on the inside. I can’t stop making them!
They are naturally gluten-free and each one has less than a teaspoon of sugar.
10 minutes prep; 15 minutes bake • Servings: 20 cookies Print Recipe
Ingredients
2 cups blanched almond flour
6 tablespoons coconut sugar
1 teaspoon baking powder
4 tablespoons water
optional: 1/8 teaspoon sea salt
topper/optional: natural sprinkles
Directions
- Preheat oven to 350 degrees F.
- Mix almond flour, sugar, baking powder, and optional salt.
- Add water and mix with a spatula until a cookie dough forms. (You'll have to work at it a bit, but it will come together.)
- On a parchment paper-lined baking sheet, place dough into 20 even mounds (I use a small cookie scoop).
- Pat each one down with your hand so it looks more like a little cookie. If you are adding sprinkles, press each flattened cookie into a pile of sprinkles so they stick to the top.
- Bake for ~15 minutes, or until golden. (Start watching them at 13 minutes to be sure the bottoms don't burn.)

I am like Betty, I heard you on WGN radio and I am interested in trying out these cookies as I need a good go to recipe that is not from a box. My family is into chocolate with their cookies, so I might drizzle melted dark chocolate on ours vs sprinkles 🙂
DJ Blatner, RDN says
Love the idea of a little chocolate on top! Fun!!!! Hope you enjoy them as much as my family & I do!

We also heard this on WGN (and are signed up for your newsletters). I made these cookies, treating them like making a pie crust: wisked the 3 dry ingredients, sprinkled iced water, and used a fork to combine. They are delicious!!!
DJ Blatner, RDN says
So glad you tried them & liked them as much as we do!!!! Thanks for the high vibe note!
