We LOVE 50/50 RICE (half brown rice / half cauliflower rice) because you can have it with pretty much anything and season it any way you like it. We are having it with blackened Barramundi, a firm whitefish that can be easily baked in the oven and stands up well on the grill too. If you can’t find Barramundi you can sub in pretty much any white fish.

Ingredients
- 1 large Barramundi filet ~8-10 ounces
- 1 tablespoon blackened seasoning
- 1 cup frozen brown rice
- 1 cup frozen cauliflower rice
- 1 bunch cilantro, chopped
- 1 large lime, juiced
- salt & pepper to taste
- 2 Tbsp guacamole
Directions
Sprinkle the Barramundi filet w/ blackened seasoning and bake at 375° for 10-12 minutes or grill over high heat for 8-10 minutes. Microwave brown rice and cauliflower rice according to package instructions. In a medium bowl, mix together both rices with cilantro, lime juice, salt & pepper. Put 1 cup of 50/50 rice on a plate, top with a 4 ounce piece of blackened fish and a big dollop of guacamole on the side.
