You know what I just LOVE about this recipe? It’s NO FUSS! Toss everything in the blender and go for it. Unlike classic pancakes, these have ZERO white flour or white sugar. Hemp seeds add a dose of plant protein and an awesome nutty flavor. Oh, and you can top these with your favorite in-season fruit, like the figs we did here.

Ingredients
- 1/2 cup unsweetened plant milk
- 1/2 cup rolled oats
- 1/4 cup hemp seeds
- 1 organic egg
- 1 1/2 teaspoons honey
- 1 teaspoon baking powder
- 1/8 teaspoon sea salt
- 1 tablespoon coconut oil
- fresh fruit
Directions
In a blender (or food processor), combine the plant milk, oats, hemp seeds, egg, honey, baking powder, and salt and pulse for 30-45 seconds until smooth.
In a 12-inch skillet, heat the coconut oil over medium heat. Pour the batter into the skillet to form 6 small pancakes and cook for about 2 minutes. You’ll know it’s time to flip the pancakes when bubbles appear on the surface of the pancakes. Flip them and cook the other side for about 2 minutes more, or until golden.
Serve topped w/ your favorite fruit.
A couple more things ... to make these VEGAN swap out the egg for a “flax egg”. To make these GLUTEN-FREE use g-f oats.
