Ingredients
- 1 medium sweet potato, baked
- 1 large egg
- 1/3 cup spinach
- Top with: 1 tablespoon guacamole, 1 tablespoon 2% plain Greek yogurt, 1 teaspoon hot sauce, 1 teaspoon chopped green onion
Directions
• Reheat sweet potato in microwave.
• In a pan over medium heat, scramble eggs w/ spinach.
