Ingredients
- 1lb ground chicken
- 1 bunch cilantro, stemmed & chopped
- 1 tablespoon chili powder
- 1 small lime, juiced
- 8 large carrots, cut into “fries”
- 2 teaspoons extra virgin olive oil
- salt & pepper to taste
- 4 sprouted hamburger buns, lightly toasted
- romaine lettuce
- 1 small tomato, sliced
- slices of red onion
Directions
In a medium bowl, lightly mix together ground chicken, 3/4 of the cilantro (reserving the rest), chili powder, and lime juice. Form chicken mixture into 4 equal patties and set aside. In a small bowl, toss carrot fries with olive oil until coated and then season with salt & pepper to taste. Grill chicken patties over medium-high heat for 7-8 minutes, flipping halfway through. Grill carrot fries for about 8-10 minutes turning every 2-3 minutes to make sure they are evenly cooked on all sides. Place a bun on a plate and top with 1 chicken burger, romaine lettuce leaves, tomato, and red onion. Add 1/4 of the fries and sprinkle with cilantro. ENJOY!
